This course offers a comprehensive process in converting coco sap to coco sugar while observing good hygienic practices to ensure that the final product is free from any contamination.
Its three modules discuss the basic steps to process coco sugar; Philippine National Standards for coco sugar; and the prevention of any contamination in the processing facility.
This course on coco sugar was developed under the Building Safe Agricultural Food Enterprises (B-SAFE) Project in the Philippines which is funded by the U.S. Department of Agriculture (USDA).
